At the top left hand corner of each recipe you will read: ‘reduces’ and ‘best during.’
Reduces refers to which of the doshas the recipe helps to bring down. When we have a doshic excess in ayurveda we reduce it through diet and lifestyle practices. When we have determined our ayurvedic constitution (there are 7 main types) we use diet and lifestyle practices to reduce our excess i.e., vata types want to reduce vata, pitta types want to reduce pitta, etc.
‘Best during’ refers to when the recipe is best consumed. We usually favor a seasonal diet in ayurveda. The ‘Best during’ is determined by when most of the main ingredients are in season in North America, and specifically in Chicago, Illinois.
