1 gal. raw milk
¼ c. lemon juice
Bring one gallon of milk to a boil and shut off heat. Immediately dd ¼ cup lemon juice until milk curdles. Pour into a cheesecloth and allow to strain an hour or more. The longer the cheese strains the more firm it will become.
